my tasks were to convince people to vote (on the phone), send people envelops reminding them of the election day, distributing sandwiches and water on the day of the election to the people who came to vote

To come at it another way, you could say that you served as a volunteer on John Doe’s campaign team.
volunteered, supported, worked-on phone bank, handed out literature, walking precincts door to door, registered voters
How about…
“Conducted phone and mail campaigns to encourage voter participation. Coordinated election day voter turnout events.”
The last sentence may be a slight stretch (although I feel “coordinated” is vague enough to work), but the first sentence is definitely spot on. Good luck!
